Ingredients
  1. • ¾ large cucumber, diced
  2. • ¼ cup cashews, chopped
  3. • ¼ white onion, diced
  4. • 2 stalks celery, sliced
  5. • 2 teaspoons cilantro, chopped
  6. • ¼ avocado, diced
  7. • Juice from ½ lemon
Instructions
  1. 1. Serve over chopped greens (kale, spinach, Belgian endive).
  2. 2. Top with Rosemary Ranch Dressing (see recipe in
  3. condiments section).
  4. Variations: Add shredded chicken
