HEALTHY AVOCADO EGG SALAD

Ingredients
- 2 hard-boiled eggs
- peeled 1/2 avocado
- 1/2 teaspoon grainy or dijon mustard
- 1/4 teaspoon sea salt (use truffle salt for an extra special treat)
- 1/2 teaspoon of fresh lemon juice pinch of freshly ground black pepper
Instructions
- Cut the hard-boiled eggs in half and remove the yolk. Rough chop the egg whites and reserve. Mash the yolks, avocado & mustard with salt & pepper until well combined. Add 1/2 teaspoon of water if needed to mash until smooth. Fold in the egg whites to your desired consistency. Serve in romain lettuce cups or on 1/2 of a whole grain English muffin. Will keep in the refrigerator up to two days.
